Ingredients
Makes a delicious cake that stays fresh for days.
- 125ml Softened butter
- 250ml Labonté Clover honey
- 2 Eggs
- 500ml Grated carrots
- 175ml Raisins
- 125ml Chopped nuts
- 50ml Orange juice
- 10ml Vanilla Extract
- 250ml All purpose flour
- 10ml Baking powder
- 7ml Ground cinnamon
- 5ml Baking Soda
- 2ml Salt
- 2ml Ground ginger
- 1ml Ground nutmeg
- 250ml Whole wheat flour
Method
- In the large bowl of an electric mixer, cream butter until light and fluffy.
- Add honey a little at a time.
- Beat until well blended.
- Beat in eggs, one at a time.
- In a smaller bowl, mix together carrots, raisins, nuts, orange juice and vanilla extract.
- Let stand.
- Combine all purpose and whole wheat flour, baking powder, soda, cinnamon, salt, ginger and nutmeg.
- Alternatively add small amounts or dry ingredients and carrot mixture to liquid ingredients
- Make sure you start and end with the dry ingredients.
- Pour batter into a 33cm x 23cm x 5 cm buttered cake pan.
- Preheat oven to 350oF.
- Bake for 35 to 45 minutes or until a toothpick inserted in the middle of the cake comes out clean.
- Remove from oven and cool on a rack for 10 minutes.
- If desired, remove from pan and let cool completely before eating.
- Cut cake into squares.
- For a special touch, serve with honey, orange cream cheese sauce.
